Creamy Pineapple Coconut Granita

This frozen granita dessert is creamy with coconut cream and tastes like a virgin piña colada. What's not to love?! Serve the granita inside a frozen hollowed out pineapple half for an extra tropical vibe;)

Serves: 4 servings
  • 3 cups cubed pineapple
  • ½ cup honey or agave
  • ½ cup coconut water
  • ¼ cup coconut cream
  • ⅛ teaspoon himalayan sea salt
  • 6 mint leaves (optional)
  1. Combine the pineapple, honey coconut water, coconut cream, salt and mint leaves in a blender and puree until smooth. Run the mixture through a fine-mesh sieve into an 8x8 inch baking dish.
  2. Freeze until ice crystals begin forming around the edges, about 1 hour. Use a fork to scrape the crystals and return to the freezer. Scrape every 30 minutes, until frozen, about 3 hours.
  3. For a fun serving suggestion, serve the granita in a frozen, hollowed out pineapple.
