This frozen granita dessert is creamy with coconut cream and tastes like a virgin piña colada. What's not to love?! Serve the granita inside a frozen hollowed out pineapple half for an extra tropical vibe;)

Ingredients
3 cups cubed pineapple
½ cup honey or agave
½ cup coconut water
¼ cup coconut cream
⅛ teaspoon himalayan sea salt
6 mint leaves (optional)
Instructions
Combine the pineapple, honey coconut water, coconut cream, salt and mint leaves in a blender and puree until smooth. Run the mixture through a fine-mesh sieve into an 8x8 inch baking dish.
Freeze until ice crystals begin forming around the edges, about 1 hour. Use a fork to scrape the crystals and return to the freezer. Scrape every 30 minutes, until frozen, about 3 hours.
For a fun serving suggestion, serve the granita in a frozen, hollowed out pineapple.
