I literally want to swim in this breakfast bowl!! It is my favorite meal right now and for good reason. It’s chock full of delicious vegetables, it’s grain-free and features my super easy garlic sauce. On a bed of the most delicious cauliflower rice, pickled onions, sprouts, avocado, pickled onions, garlic sauce and a beautiful sunny side up egg shine. There is so much flavor and wonderful texture in this bowl that you won’t believe you’re eating health food. It’s incredible!!

Make the pickled onions, garlic sauce (and chimichurri, pictured but optional) in advance and keep them in the fridge for a quick meal whenever you like. All you need to do is warm the cauliflower rice and cook the egg and you’re ready to eat!

Pro tip: If you want to make the perfect sunny-side up egg, cook it in a skillet over medium heat with a generous amount of oil. As the white of the egg cook, use a spoon to gather excess oil and baste the white close to the yolk. This hot oil helps the white near the yolk to cook without overcooking the rest of the egg. Viola!

This cauliflower rice grain-free breakfast bowl is bonkers delicious! Made with quick condiments you can keep on-hand in the fridge, you can be eating this bowl as quickly as you can fry an egg. Perfect!

Ingredients
  • ½ cup cauliflower rice
  • few spoonfuls garlic sauce
  • some pickled red onions
  • sprouts (I use home-sprouted broccoli and radish sprouts)
  • half of an avocado, sliced
  • chimichurri (optional but fantastic)
  • 1 sunny-side up egg
Instructions
  1. Heat cauliflower rice either in a pan or in the microwave.
  2. Layer warmed cauliflower rice on the bottom and all remaining ingredients over the cauliflower rice.
  3. Dig in!
