Creamy Pineapple Coconut Granita

Would you look at this show stopper?! Hubba hubba! Talk about an easy, tasty, and cool way to serve a granita at your next barbecue. This frozen dessert is creamy with coconut cream and tastes like a virgin piña colada. What’s not to love?! The Food Artist and I can’t get enough! Serve the granita inside a frozen hollowed out pineapple half for an extra tropical vibe;)

A granita is the perfect way to use leftover pineapple. We always have plenty left after a pool party with a big fruit salad and what better way to enjoy it than in a frozen treat?! This one is a big hit with the kiddos too! They love scooping it out of the pineapple.

Serves: 4 servings
Ingredients
  • 3 cups cubed pineapple
  • ½ cup honey or agave
  • ½ cup coconut water
  • ¼ cup coconut cream
  • ⅛ teaspoon himalayan sea salt
  • 6 mint leaves (optional)
Instructions
  1. Combine the pineapple, honey coconut water, coconut cream, salt and mint leaves in a blender and puree until smooth. Run the mixture through a fine-mesh sieve into an 8x8 inch baking dish.
  2. Freeze until ice crystals begin forming around the edges, about 1 hour. Use a fork to scrape the crystals and return to the freezer. Scrape every 30 minutes, until frozen, about 3 hours.
  3. For a fun serving suggestion, serve the granita in a frozen, hollowed out pineapple.
