Apple Ginger Cucumber Cooler

Because I live in the desert, and because here the cool days are peppered with the remaining hot summer days that never really go away, sometimes we still need cold, refreshing beverage options. So between the roasted pumpkin spice lattes, we find ourselves drinking these apple ginger cucumber coolers. If there is a more refreshing beverage than those made of cucumber I have yet to find one. What’s not to love about cucumbers?! Whether thrown on your puffy eyes or into your belly they always satisfy. This is almost a tonic it’s so healthy. The sweetness of the apple, heat of the ginger, and coolness of the cucumber create a lovely balanced beverage.

Super simple and incredibly refreshing cucumber cooler!

Cuisine: Gluten-Free, Vegan
Ingredients
  • 1 big cucumber
  • 1" knob of fresh ginger
  • 1 large apple
  • fresh water
Instructions
  1. Process cucumber, ginger and apple through a juicer or blend all ingredients and strain through a mesh sieve.
  2. Split between two glasses and stir in filtered water to fill any extra space.
  3. Garnish with thinly sliced cucumber, if desired.
