Melon Skewers with Fresh Mozzarella, Prosciutto and Basil

I’ve got more cool food for you today as we continue to try and beat the heat! Yikes! It gets challenging after a while to dream up more cold foods for meals. This recipe is super simple though and keeps well in the fridge if you reserve the balsamic drizzle. It’s healthy, it’s fresh, it’s super quick and won’t heat up your house. Make yourself some melon caprese skewers with prosciutto for a great grab-and-go refreshing snack or, hell, eat a bunch for dinner. Can’t beat melon, mozzarella and prosciutto!!

I won't lie, this is a great appetizer of course, but it's also a fantastic DINNER on a miserably hot day in Los Angeles (or anywhere)! Want to win over some kiddos, make these cute balls of awesome for dinner. They've got it all, fruit, cheese, meat and herbs. Winner winner you rocked dinner!
